Keto Friendly Peanut Butter Chocolate Fat Bombs

Since my transformation back in December, I must say I am super proud of how far I have come. I reached my goal weight by simply following a 1200 calorie diet and a lot of exercise. As my body got used to the same routine I took somewhat of a break and figured I should enjoy whats left of my summer and I have

gained a few pounds but hey thats the beauty of this lifestyle there is no destination. Its a constant change and I truly love it! Well now that my birthday is coming up in October I am ready to transform my body yet again and this time I’m doing it the low carb way. Ive tried many times these past couple of weeks to get it right but today I can say my mindset is where it needs to be to stick to this plan to see the change I want to see. As my sweet tooth attack happened I had to search for a craving killer. So a good friend of mine shared a recipe with me to try. Let me just say I am sooooooo thankful she did! I did make some modifications and I’m going to share the recipe I followed with the ingredients I used. I hope you can use this as a guide to keep you on track as well!

RECIPE:

1/2 Cup of Organic Coconut Oil
1/2 Cup of Natural Peanut Butter or Almond Butter
(I used 1/2 cup of powdered peanut butter )
(Less than 5 grams of sugar is important)
2 to 3 tablespoons of unsweetened cocoa powder
2 tablespoons of Splenda or Stevia 
(or sweeten to taste)
A dash of Vanilla extract (Optional)

1. In a large pan heat and melt your coconut oil and peanut butter.
2. Stir in your cocoa powder and splenda.
3. Once removed from the heat you may add your vanilla extract. 
4. Pour into silicone candy molds or even small cupcake holders.
Each mold or holder should hold one tablespoon of the mix.
Place in the freezer and until you have chocolate candy looking deliciousness.

You can eat one fat bomb when that sweet tooth craving starts or if you want to curb your appetite.

If you’re anything like me I like to keep track of everything on my LoseIt App. So my calculations for the nutrition facts for 1 piece comes out to 
80 calories
 1.5 grams of Protein 
1.8 Carbs 
9 grams of Fat

Also you should keep them zip locked air tight and in the fridge or freezer as they will melt being at room temperature.

Quick and Easy Shrimp Taco Recipe!

Ive learned to LOVE eating healthy! You are what you eat! Theres nothing wrong with splurging once in a while but 99.9 percent of the time you have to work for what you want. In this case im a new mom working toward my sizzling summer body! I want a nice fat ass and small stomach haha jk I want to look lean and feel good about myself. I want to try on that sexy dress and say “HELL YEA I look good!” I want to be able to show up to my daughters school and not have her embarrassed that her mom is chubby or that I dont have the energy to keep up with her activities! Any way back to the topic ahhh my shrimp tacos.

So what I did was
purchase a bag of frozen cooked shrimp, some limes, pico de gallo from Tonys Finer food already prepared and some wheat tortillas only 100 calories each. 
Prep time: 15 Min
When I got home I let a handful of shrimp thaw out and rinsed them. Once they thawed out I cut them up into tiny pieces like this :

I then cut the limes in half 
And squeezed them onto the shrimp 
Then I mixed the shrimp in with the pico de gallo.
And WALA! You have your main taco ingredients to put onto your healthy wheat tortillas. 

How to make Pastelon…..Puerto Rican Lasagna!

Hey everyone! Its the beginning of the year and as most of you know Im super big on working out, but today I had a craving for Pastelon! Pastelon is like lasanga a puerto rican style lasanga! I made it today with the help of my mom! Here’s our recipe so you can try making it as well!

What you need: 
1. Ripe plantain bananas 
2. Ground Beef (season to taste)
3. Eggs (to scramble)
4. Chihuahua cheese
5.Lasagna pan
6. Oil to fry Plantains

First you want to start by cutting your ripe plantains like this.

You then want to fry the plantains until they are a light to medium brown.
Once you’ve fried enough plantains you can spread them out in a lasagna pan like you would lasagna noodles. You need scrambled eggs to pour at the bottom of the pan in a thin layer.
You then add ground beef  on top of the spread out plantains.

After youve added the meat add chiuahuah cheese on top of the meat and spread out the plantains to start the second layer.

Repeat the steps above for the second layer. 
You then want to bake in the oven at 400 for about 30 to 45 minutes

Arturo’s Tacos Chicago – SAVE YOUR MONEY!

Let me start off by saying I USED to LOVE this place! It is located right at the corner of Armitage and Western in Chicago,IL.

Their tacos used to be delicious and I was always a satisfied customer but after visiting today for the first time in 9 months I can honestly say i will NEVER visit this place again! I ordered a taco dinner which came with 3 tacos a side of rice and refried beans. Let me start with the tacos. I requested them to be steak or carne asada the steak was GREASY! The greasiest steak I’ve ever tasted! It was almost like it was left over and reheated. I also think they changed the quality of steak because it tasted cheap! The rice was good but not fresh either and the beans were good but again not very warm. The waitress was nice but didn’t even bring us water! Its kind of rude to look at the next table and see everyone with a glass of water before they order! That really pissed me off! My husband was going to tip her but they don’t allow tips on a credit or debit card and nowadays who carries cash?? On a scale of 1 to 10 1 being the absolute worst I rate them a 1. If you can save your money and avoid this place please do! Its totally not worth the time or money!
